Discover this unique know-how seen mainly in Japan: the shading of tea plots, which produces exceptional teas (“kabusecha”). Depriving the tea bush of direct sunlight under straw blinds, or “honzu”, for varying lengths of time just before harvesting, brings out other, richer flavors once the tea has been harvested. This treatment is reserved for the most delicate teas and spring harvests. During this workshop, you'll taste two shaded Sencha teas, a Gyokuro and a matcha from a shaded spring harvest.
