Matcha is a special Japanese green tea (Tencha) that is shaded before harvesting and then ground to a fine powder. It is not brewed like other teas: it is whisked with a bamboo whisk ("chasen") in a flat-bottomed bowl ("chawan"), to obtain a smooth, frothy texture. In this way, unlike infused teas, the whole leaf is consumed, allowing the full benefits of the tea to be enjoyed. Considered one of the finest teas, it is also one of the richest in theine, antioxidants, vitamin C and magnesium. Zen Buddhist monks used to drink this tea to stay fully awake during their meditations when this religion took off in Japan. Today, it is reserved for the "chanoyu" tea ceremony, built entirely around the art of preparing this very special tea.

Kiritsubo is an intensely green grand cru matcha tea from a spring harvest. It is slowly ground to a very fine powder using a stone grinder, in the traditional way.

Highly umami, unctuous and mild, it offers incomparable rich cocoa notes, with a delicate touch. It produces a dense, gourmet, mellow froth.

This is an exceptional tea to be reserved for special occasions.
