White chocolate and matcha muffins
By popular demand, here is the receipe of the matcha cakes that we serve in our tea house here in Paris! Enjoy!
Preparation time: 30 minutes
Resting time: 3h minimum, a whole night if you can
Baking time: 35 minutes
Ingredients:
For about 6 muffins, you will need:
- 2 eggs
- 150g of brown sugar
- 200g of flour
- 1 small packet of baking powder
- 1 plain yoghurt
- 125g of butter
- 1 big dessert spoon of matcha tea (at least)
- 1/2 white chocolate tablet
Process:
Melt the butter and put it to one side.
In a bowl, whisk the eggs with sugar. The mix should be white and foaming.
Add flour, stir together, then add baking powder.
Add yoghurt and melted butter. Mix.
End with the matcha, the quantity you add depends on your tastes.
Let the mixture stand in your fridge for at least 3 hours (a whole night is better).
The next day, cut the white chocolate into chips.
Pre-heat your oven at 160°C
Lay a first layer of dough in muffin baking pans, add a few chocolate chips, then do it again and end with chocolate chips.
Bake for 35 minutes in the bottom section of you oven.
Let you muffins cool before you remove them from the tin, top with matcha powder before serving.
